Vegan "scallops" made from lion's mane mushrooms that are brined, compressed, pasteurized, and frozen. 12-15 count per 1/2 lb package. Keep frozen until cooking. Here's a few ideas from Robbie at Flat#12 Mushroom on how to prepare them:
They were developed to be pan fried just like a scallop. High heat will yield a familiar scallop like caramelization but feel free to continue cooking them in dishes like jambalaya or dirty rice.
We have also sliced the scallops into 1/4” disks and marinated them in oil and spices for a few days in the fridge and that yields a really fun canned seafood substitute to be eaten with toast points or to decorate a hummus plate, or even just to add into a nice citrus salad.
Just like all mushrooms they can be cooked quick or very long!
