Chicken Noodle Soup with Bone Broth

NOTE: If you don't have the Mama's Mission soup mix, you can just slice one more stalk of celery and two more carrots and noodles of your choice to cook in the broth!
If you need something warming and soothing during the long winter, particularly if you're not feeling well, this chicken soup with bone broth is a very mineral-rich and healing meal. While you can make a delicious chicken broth in a couple of hours with a small amount of prep work, a true bone broth (with all of its healthy gut-supporting collagen) is best cooked for a long time - I like to use a crockpot to keep cooking it overnight! Then, you can use your homemade bone broth with a Mama's Mission Homestyle Chicken Noodle Soup Mix to add some yummy noodles and even more veggies and aromatics!
Serves 6-8
INGREDIENTS
- 1 whole chicken
- 1 onion, quartered
- 2 stalks celery, cut into large chunks (this will be removed from the broth) OR a large handful of celery leaves if your bunch of celery has the leaves still intact - they have great flavor!
- 2 carrots, cut into large chunks (this will also be removed from the broth - feel free to just give them a quick scrub but leave the skins and even the tops on)
- 2 chicken bullion cubes or 1 tbsp chicken bullion paste/soup base (optional)
- 2 pinches saffron (optional but saffron has wonderful healing qualities if you have some!)
- salt to taste
- 1 package Mama's Mission Homestyle Chicken Noodle soup mix
Instructions
- Place your whole chicken in a large soup pot on the stove. (If your chicken has the giblets inside, pull them out and feel free to use the neck and heart in the broth for extra health benefits. The liver can be bitter so it's better to cook separately, either for yourself or for your pets to enjoy for some extra nutrients!)
- Add the onion to the pot along with the celery and carrot chunks.
- Fill the pot with enough water to fully cover the chicken and vegetables (at least 6 cups). Bring to a boil on high, then reduce heat to low and simmer for 30-45 minutes or until chicken is cooked through. While the soup is simmering, skim any foam from the surface and add more water if needed to keep the water level above the chicken and veggies.
- Pull the chicken out of the pot into a large bowl. When it is cool enough to handle, pull the meat off the bones and cut or tear the meat into bite-sized pieces.
- Place the bones, skin, and giblets into a crock pot and transfer the broth from the stove into the crock pot as well. You'll want at least 6 cups of broth for this recipe, so feel free to add more water if needed at this point. (If you have extra broth, it's great to have around for sipping or even freeze for future recipes!) Add bullion and saffron if using. Cook on high for 2-3 hours, stirring occasionally. Taste the broth and salt if needed. NOTE: If you want to stop and use your broth at this point, that is totally fine - you can strain and use it! Otherwise, continue with instructions for a "true" bone broth.
- Reduce heat to low. Leave crock pot on low overnight, at least 8 hours but up to 12 or even more. When you're ready to finish making your soup, place a strainer over a large soup pot on the stove and pour your broth through it to remove bones, cooked veggies, and any other solids.
- Continue heating your broth on medium high. Add your shredded chicken back into the broth and cook Mama's Mission Homestyle Chicken Soup ingredients according to package directions until noodles are tender. Enjoy!
