Ithaca Milk was founded on the belief that small-scale, sustainable farming is possible in a modern farming landscape — that the animals and the land that produce our food should be treated with respect and managed with the living environment in mind.

Their 100% Jersey milk is sourced from three small farms located within ten miles of the creamery in the Finger Lakes region. Each farm is less than 100 acres and milks a small herd of about 50 Jersey cows — chosen deliberately for the rich, naturally golden milk they produce. During the warm months, the cows graze on pastures with specially planted grasses that provide all the natural nutrition they need without artificial supplements. 

Rather than correcting for low-quality milk with artificial ingredients, thickeners, or stabilizers, Ithaca Milk focuses on getting the best milk possible from the start — non-homogenized, vat-pasteurized, and same-day delivered from farm to creamery. The result is milk and yogurt with a distinctly rich, creamy flavor that mass-produced dairy simply cannot replicate. 

While yogurt is their specialty, Ithaca Milk also bottles pure Jersey milk and crafts raw milk cheddar from any surplus — a commitment to using every drop of what their farm partners so carefully produce. It's dairy done the way it was meant to be: small, honest, and exceptionally good.
