Root Down Farm
Root Down Farm is a family owned farm run by Steve and Erin Blabac located near the heart of Clarence Center. Started in the spring of 2011 to support 50 CSA shares, it has grown to serve 300 members and FreshFix customers! The farm consists of leased land throughout the town of Clarence; some of which is protected by the Western New York Land Conservancy.All of Root Down crops are grown without the use of conventional, synthetic or artificial fertilizers, pesticides, herbicides and fungicides. The farm grows many varieties of vegetables, using a careful rotation of crops to help mitigate pests and disease. The farm also strives to minimize its dependency on natural resources by converting a cultivating tractor to an electric motor and using drip irrigation.
To preserve your turnips, be sure to wash and scrub them in cold water. Then wrap your turnips in a damp paper towel and place them in a plastic bag. These can then be stored in your refrigerator crisper drawer for up to two weeks!
Fun Fact: If you ever have turnips that still have the greens, you're in luck and they can also be stored this way.
BRAISED PURPLE TOP TURNIPS WITH GREENS
This 10-minute recipe is sure to become your new favorite side dish!
Ingredients:
1 TBSP. Olive Oil (or any oil substitute)
1 TBSP. Butter
2 Garlic Cloves (minced)
1 TBSP. Liquid Aminos (or Soy Sauce)
2 LBS. Purple Top Turnips (trimmed and thinly sliced)
1/4 LB. Turnip Greens (or any alternative green)
1 Cup. Vegetable Stock (or any alternative stock/broth)
In a large skillet, add your oil, and place over medium/high heat. Please make sure the entire surface of the pan is covered. Then add butter and garlic, and stir for 1-2 minutes.
Then add your turnips and a splash of broth. Cover, and cook the turnips until tender (about 8 minutes), turning halfway through.
Add the remainder of the broth, liquid aminos, and greens. Cover and cook for 1-2 minutes. Add salt or pepper to your preference. You can cook a little longer if you prefer softer greens!
FreshFix Tip: Try this with kale as your green for a little extra crunch! Or drizzle with a little honey for the addition of sweet to this savory dish.
