This side dish combines the flavors of fall, with roasted Brussels sprouts (a cold hardy vegetable) and the sweetness of maple syrup. Add in the tangy flavors of mustard and balsamic and you'll have a well balanced dish that is perfect for your holiday table! 

Ingredients: 

  • 2 lbs Brussels sprouts (trimmed and cut in half)
  • 3 tbsp olive oil
  • salt and pepper to taste
  • 1 tbsp Dijon mustard
  • 3 cloves garlic, minced
  • 4 tsp balsamic vinegar (or substitute Dad's brew vinegar!)
  • 3 tbsp maple syrup
  • OPTIONAL: 1/2 cup chopped walnuts

  
​Directions 

  • Preheat oven to 375 degrees. Toss Brussels sprouts with olive oil, salt, and pepper. Spread out on a baking sheet lined with foil and roast for 25-30 minutes, or until they are starting to brown on the edges.
  • While sprouts are roasting, whisk together Dijon mustard, garlic, balsamic vinegar, and maple syrup.
  • Remove sprouts from the oven, pour glaze over them, and lightly mix on the baking sheet. If using chopped walnuts, add them at this point. 
  • Return baking sheet to the oven to roast for 10-12 more minutes. Enjoy!
