Named after our very own Queen City-Buffalo, NY. This cheddar cheese is considered a mild cheese, only aged 6-8 months. However, it is a full-bodied, flavorful, and rich cheddar. With a firm yet slightly crumbly texture, our cheddar is a great cheese to include in your next cheese board! USDA organic.

Great cheese doesn't start in a creamery — it starts with a family that's been caring for the land for generations.
Mammoser Farms was established by Norbert and Ethel Mammoser in Eden, NY in 1949 — and that's exactly where the name "Eden Valley" originates. Norbert and Ethel raised four sons, each of whom helped grow vegetables for farmers markets and tend to the cows and dairy. Jerry, the eldest son, became a partner in 1979, helping his father run an expanding operation. What began as a family farm has since grown into a multi-generational enterprise, now including four milking dairies and six owners, with locations in Eden, South Dayton, Sinclairville, and Cassadaga, NY. The idea of a creamery was born long before Eden Valley Creamery officially opened its doors in 2019 — but finding the right location, skilled cheesemakers, and product marketers took many years. When it all came together, the result was something truly special: a farm-to-table creamery with milk sourced fresh every single day from less than a mile down the road.
Eden Valley Creamery's mission is to deliver high-quality artisan cheese from 100% Certified Organic milk, with a vision to be a true farm-to-table business — giving customers the opportunity to know the face behind the food they put on their plate, and know that it was made with integrity.
Every cheese is crafted from simple ingredients: organic milk, natural cultures, salt, and organic spices — nothing more. Their lineup includes fresh cheese curds in seven varieties, best enjoyed within days of being made, as well as a diverse range of aged cheeses including cheddar, gouda, and havarti, with natural rind cheeses aged on wooden spruce boards that add a depth of flavor rooted in the farm's deep connection to the land.
The cows are pastured during the summer months, all recipes and practices are reviewed and approved by Pennsylvania Certified Organic to ensure USDA compliance, and the entire operation reflects a farm family that genuinely believes in doing things right — for the animals, the land, their employees, and the communities they serve.
