Organic Tatsoi.  Locally-grown

Tatsoi is a very versatile green, equally suited to being served raw or lightly cooked. To make it easy, just use tatsoi anywhere you'd use spinach.

Root Down Farm

Root Down Farm is a family owned farm run by Steve and Erin Blabac located near the heart of Clarence Center. Started in the spring of 2011 to support 50 CSA shares, it has grown to serve 300 members and FreshFix customers! The farm consists of leased land throughout the town of Clarence; some of which is protected by the Western New York Land Conservancy.

All of Root Down crops are grown without the use of conventional, synthetic or artificial fertilizers, pesticides, herbicides and fungicides. The farm grows many varieties of vegetables, using a careful rotation of crops to help mitigate pests and disease. The farm also strives to minimize its dependency on natural resources by converting a cultivating tractor to an electric motor and using drip irrigation.

Storage & Preparation

Store Bok Choy in a plastic bag in your refrigerator vegetable drawer for up to a week. Wait to wash it until you are ready to eat it.

To prepare full size baby box choy, remove the bottom of the Bok Choy plant with a sharp knife so that the leaves separate. Rinse each leaf with cool water and pat dry with paper towels or use a salad spinner.

The greens have a spinach-like taste with a very mild bitterness. You can purchase bok choy in typically two sizes, baby and large mature stalks that’ll need to be chopped into smaller pieces. Although the leaves can be eaten raw and tossed into fresh salads, they are best cooked. Bok Choy is fat free, low in sodium and calories, an excellent source of vitamin A, vitamin C, and folate.
