Everything grown on Groundworks' two acre farm on Genesee Street in Buffalo is USDA Certified Organic. In short, that means no harmful pesticides, herbicides, chemical fertilizers, or GMO seeds in their production. They grow over 50 different varieties of vegetables, and some small fruit, following the seasons. Early spring lettuces, greens, and sweet peas give way to summer's heat-loving tomatoes, peppers, cucumbers, and eggplant. In the fall, enjoy root veggies, hearty greens, and cabbages. The GMG farmers love to mix up the classics with an exciting variety of crops that might not be as familiar such as mizuna, tatsoi, garlic scapes or kohlrabi.To store Patty Pan properly, keep the squash dry and unwashed. Then place in a paper bag with one end of the bag open and keep in the crisper drawer in your fridge. Storing this squash in the fridge is better than keeping it on the counter.
Patty Pan Squash are made up of 90% water, and are a wonderful source of vitamin A, magnesium, copper, and iron.
